Does the university stated anything in particular about the portfolio cover? You can try make it simple and playing with your own typography style for example using your own fonts to write and stick with being minimalistic or you can do a collage of your artwork? That’s just my suggestion, TCDC might help you better though, every time I feel uninspired I go there :)
